Crispy Hasselback Potatoes

Back

Golden, crispy Hasselback potatoes baked with pancetta, green shallots, thyme and stock, then finished with melted butter. Everything is cooked from stovetop to oven in a single 26cm AUS-ION™ pan.

Prep: 20 mins | Cook: 1 hr 25 mins | Total: 1 hr 45 mins | Serves: 4–6

Ingredients

  • ¼ cup extra virgin olive oil
  • 125g pancetta or prosciutto, cut into strips
  • 4 green shallots, peeled and sliced
  • 6 sprigs of thyme
  • 1 cup vegetable stock
  • 10 roasting potatoes
  • 50g melted butter
  • Salt and pepper, to taste

Equipment

Method

  1. Preheat the oven and pan. Preheat oven to 180°C. On the stovetop, preheat your AUS-ION™ pan (26cm is ideal) over medium heat and add oil.
  2. Cook the pancetta. Add pancetta/prosciutto, shallots and thyme. Cook, stirring occasionally, for about 5 minutes until golden.
  3. Add the stock. Add stock and bring to the boil. Transfer the contents of the pan to a heatproof mixing jug and set aside.
  4. Slice the potatoes. Using a sharp knife or mandolin, slice potatoes crosswise very thinly, retaining the shape of the whole potato.
  5. Arrange in the pan. Arrange in a single layer inside the pan, so that the potatoes fit in snugly.
  6. Pour over the stock mixture. Pour over the pancetta/stock mixture, allowing the liquid to drizzle into the potato slices. Season with salt and pepper (keeping in mind that prosciutto is already salty).
  7. Bake covered. Cover the pan with a lid or foil, and place in the oven for about 45 minutes.
  8. Add butter and crisp. Uncover and pour over melted butter. Bake for a further 30 minutes until cooked through and golden.

Tips

  • Go easy on the salt if using prosciutto, as it's already salty.
  • No lid? Cover the pan with foil instead.

FAQ

What are Hasselback potatoes?

Hasselback potatoes are whole potatoes sliced crosswise very thinly while keeping their shape, then roasted so the edges turn golden and crispy.

Can I use prosciutto instead of pancetta?

Yes. This recipe works with either pancetta or prosciutto. If using prosciutto, keep in mind it's already salty when seasoning.

How long do Hasselback potatoes take to bake?

In this recipe, they bake at 180°C for about 45 minutes covered, then a further 30 minutes uncovered with melted butter until cooked through and golden.
