The 31cm nöni™ Sauteuse is wrought from a single 3mm-thick sheet of highly conductive non-nickel stainless steel. The alloy is non-nickel and contains no synthetic coatings — no PTFE, no PFOA, no PFAS — and no aluminium core. Because the pan is wrought in one piece, there are no rivets, screws, welds or joins between the cooking surface and the handles. This seamless one-piece construction removes the common failure points of traditional stainless cookware and leaves a smooth interior with no crevices for food residue to lodge in.
A precision-engineered concave is built into the base. As the steel heats and expands, the base flattens for stable, even contact with the cooktop — standard for quality heavy-gauge iron and steel cookware.

Unlike seasoned iron, the non-reactive stainless surface is fully compatible with acidic and liquid-based foods. It will not rust, will not strip seasoning, and will not impart metallic flavours.
The main handle is long, ergonomic and vented along its length to dissipate heat, keeping it cool enough to grip during stovetop cooking. The helper handle on the opposite side provides the second grip point needed for safe lifting at this weight and capacity. Because both handles are forged from the same single sheet of stainless steel as the pan body, they are fully oven, grill and flame safe.
