Tall sides, no nonsense. A 22cm non-nickel stainless sauteuse for sauces and simmering, Australian-made and dishwasher safe.
Australia
The 22cm Stainless Steel Sauteuse from the nöni™ range by Solidteknics is a seamless, non-nickel stainless steel sauté pan manufactured in Sydney, Australia. With tall, tapered Windsor walls and a 1.75-litre capacity, the 22cm sauteuse bridges the gap between a frypan and a saucepan — designed for cooks who want one versatile pan for sauces, simmers, risottos, frittatas, small roasts and the kind of contained sauté work that needs depth as well as surface area. It is coating-free, PFAS-free, non-nickel and built to deliver multi-generational service across every modern heat source.
The 22cm nöni™ Sauteuse is made from a single 3mm-thick sheet of highly conductive non-nickel stainless steel. The alloy is non-nickel and contains no synthetic coatings — no PTFE, no PFOA, no PFAS — and no aluminium core. There is nothing between you and the cooking surface but clean, dense, non-reactive stainless steel. Because the pan is wrought in one piece, there are no rivets, screws, welds or joins between the cooking surface and the handle. This seamless one-piece construction removes the common failure points of traditional stainless cookware and leaves a smooth interior with no crevices for food residue to lodge in.
A precision-engineered concave is built into the base of every nöni™ pan. As the steel heats and expands, the base flattens for stable, even contact with the cooktop. This is standard for quality heavy-gauge iron and steel cookware.
The sauteuse — sometimes called a Windsor pan — sits between a skillet and a saucepan. The walls are taller and gently tapered, giving you enough depth to hold liquid for braising, simmering and reducing, while still angled out enough to allow free movement of food during a sauté toss. The 22cm size and 1.75-litre capacity make it the ideal one-pan vessel for cooks who want versatility without committing to multiple specialist pans.
The 22cm nöni™ Sauteuse is fully induction-compatible and performs across every cooktop and heat source available in modern domestic and commercial kitchens, including:
The high conductivity of the wrought stainless construction means the pan heats quickly and retains heat efficiently. Most cooks find medium heat replaces what they previously called high — translating to lower energy use over the working life of the pan.
At 1.1kg, the 22cm Sauteuse is the lightest sauté pan in the nöni™ range — easy to manoeuvre one-handed during the toss, but still substantial enough to retain heat for searing and reduction.
The long ergonomic handle is vented along its length to dissipate heat, keeping it cool enough to grip during stovetop cooking. Because the handle is forged from the same single sheet of stainless steel as the pan body, it is fully oven, grill and flame safe — there are no plastic or silicone components to melt, no rivets to loosen, and no joins to fail under heat.
The 22cm nöni™ Sauteuse is the everyday workhorse for the cook who wants depth and versatility from a single pan:
Unlike seasoned iron pans, the non-reactive stainless surface is fully compatible with acidic and liquid-based foods. It will not rust, will not strip seasoning, and will not impart metallic flavours to wine reductions, vinegar, citrus or tomato sauces — making it the right pan for saucy, slow-cooked dishes.
The 22cm Sauteuse is designed to pair with the nöni™ 22cm Skillet-Lid (sold separately), creating an oven-to-table duo that doubles your output: the sauteuse for the base dish and the skillet-lid as a high-performance shallow frypan, baking tray or roaster on its own.
The 22cm nöni™ Sauteuse is dishwasher safe and requires no seasoning. The seamless one-piece design means there are no joins to trap food residue or detergent. Handwashing is recommended to preserve the brushed stainless finish over time. The pan can be scrubbed, soaked and returned to high heat without damage. Each pan is stamped with the month and year of manufacture, and is supplied with a calico storage bag.
Most stainless sauteuses on the market are thin-gauge austenitic stainless with an aluminium core, riveted handles, and added nickel. The 22cm nöni™ Sauteuse replaces that approach with a single sheet of 3mm highly conductive non-nickel stainless steel, manufactured in Sydney, stamped with its month and year of production, and backed by a multi-century warranty. It is one of the only non-nickel, coating-free, seamless stainless sauteuses manufactured in Australia, and is engineered to be passed between generations rather than replaced.
