Impress your family and friends with this super simple recipe that guarantees restaurant-level crispiness on your salmon skin, right from your very own kitchen!
Ingredients
- 2 skin-on salmon portions (or enough for your guests)
- Olive oil, or any cooking oil of your choice
- Salt and pepper to taste
Directions
- Pre-heat your pan on a low temperature to allow it to slowly warm up. Don't add the oil yet — let your pan heat up first!
- Place your salmon portions on a flat surface (cutting board or plate) with the skin side facing up.
- Pat and/or wipe the skin of the salmon with paper towel until it is completely dry. Once dry, flip the portions so they are skin-side down.
- Massage a little olive oil into the flesh — just enough for the salt and pepper to have something to stick to. Sprinkle with salt and pepper.
- Flip the salmon back over so it's skin-side up and repeat the oil, salt, and pepper process on the skin side.
- Once your pan is hot over medium heat, add enough oil to cover the surface in a shallow layer.
- Gently place your salmon portions skin-side down into the pan. Press each portion down with a spatula for 10 seconds to allow the skin to flatten and form to the pan surface.
- Cook skin-side down for 7–8 minutes, or until the flesh is cooked about three-quarters of the way through. The skin should naturally release from the pan once it's ready.
- Flip the salmon to flesh-side down and cook for a further 3–4 minutes, or until fully cooked through.
- Once cooked through, flip back to skin-side down for 90 seconds to ensure the skin is super crispy.
- Remove from the pan and serve skin-side up with your choice of sides — mash and veggies, over a salad, or however you like!
