28cm Stainless Steel Wok – nöni™ | Australian-Made Long-Handled Wok

The 28cm Stainless Steel Wok from the nöni™ range by Solidteknics is a long-handled, flat-bottom wok wrought in Sydney, Australia from a single 3mm sheet of non-nickel stainless steel. It holds 3.5 litres, weighs 1.65kg and runs on every heat source including induction. There are no coatings, no rivets, no nickel and no seasoning to maintain.

What Makes It a Wok and Not a Deep Frypan?

The shape. High sides curve up from a flat base with no corner where the wall meets the floor of the pan, and that continuous curve is what wok cooking is built on. Food rides up the side and falls back into the heat as you toss it, and there is no right-angled seam for rice or sauce to catch in. A deep frypan has that corner, which is why food piles up in it instead of circulating. This one pairs the curve with a single long handle, so it can be worked one-handed the way a traditional wok is.

Who Is the 28cm Size For?

The 28cm is the everyday size. There is room to stir-fry for one to three people without crowding the pan, and at 1.65kg it is light enough to lift, toss and store easily. A 35cm family wok needs two hands and a clear bench; this one lives on the cooktop.

Does It Work on Induction?

Yes. The base is flat with a 14cm stove contact zone, so it sits flush on an induction hob and heats across the whole base. Non-nickel stainless steel is magnetic, so no adaptor plate or wok ring is needed. A traditional round-bottom carbon steel wok cannot do this, because the curved base never makes proper contact with a flat induction surface.

Material and Construction

The wok is wrought from one 3mm-thick sheet of non-nickel stainless steel. The alloy contains no nickel, and the pan carries no synthetic coating of any kind: no PTFE, no PFOA, no PFAS, and no aluminium core. Because it is formed in a single piece, there are no rivets, screws or welds anywhere on the pan, including where the long handle meets the bowl. Nothing can loosen, and there is no crevice for food to sit in.

Each pan is stamped with the month and year it was made.

Does It Need Seasoning?

No. Stainless steel needs no seasoning layer, will not rust if left wet, and cannot have its surface stripped by an acidic sauce. Wash it, dry it, put it away. It is dishwasher safe, and because there are no joins in the body there is nowhere for residue to hide.

Stainless Steel Wok vs Carbon Steel Wok

Carbon steel is the traditional wok material and it cooks well, but it has to be seasoned, kept dry, and re-seasoned when an acidic or liquid-heavy dish strips the layer back. It also rusts. Stainless steel removes all of that maintenance while staying fully compatible with tomato, wine, citrus, vinegar and long simmering. The trade is that stainless does not build a patina, so the surface stays the same from the first cook to the thousandth.
