Choose the head to suit the condition of the blade:\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003e400 grit, coarse: regrinds blunt, worn or damaged edges to a 15 degree bevel each side\u003c\/li\u003e\n\u003cli\u003e1000 grit, medium: reconditions a dull blade at a 20 degree bevel each side\u003c\/li\u003e\n\u003cli\u003e2000 grit, fine: keeps an already sharp edge razor sharp with a quick touch-up at 20 degrees each side\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003eEach head is a one-piece pass-through sharpener made from spring steel with an industrial diamond coating. Flexible fingers hold the angle, so there is no guesswork. Draw the knife through with a gentle rocking motion rather than dragging it.
