The AUS-ION™ 35cm Iron Pro Wok is an Australian-made flat-bottom iron wok with a 4.5 litre capacity, forged in Sydney from a single 2.5mm sheet of clean Australian iron. It has dual handles, a flat induction-compatible base and a seamless one-piece body with no rivets, no welds and no coatings. It arrives pre-seasoned and ready to cook.
35cm measured across the inner top rim, holding 4.5 litres, 50.5cm total length across the dual handles, 2.3kg. That is our largest iron wok, and it is sized for cooking for a crowd rather than a couple. There is enough surface area to keep food moving without steaming it, which is the thing that goes wrong when a stir-fry is crowded into too small a pan.
Alongside the 30cm Iron Wok (4 litres, 1.7kg), the 35cm adds capacity and reach. If you regularly cook for five or more, or you want the room to toss properly, this is the size.
Yes. The 14cm flat base sits flush on an induction hob, so the wok grips the field the way a traditional round-bottom wok cannot. Iron is magnetic, so no adaptor plate or wok ring is needed.

Wok cooking depends on responsiveness. When the burner goes up or down, the pan has to follow quickly, and a very heavy pan will not. AUS-ION™ woks are formed from 2.5mm iron, a thinner gauge than the 3mm frypans, precisely so a big wok still heats fast and reacts fast while keeping enough thermal mass for a real sear. A carefully engineered concave in the base allows for metal expansion as the pan heats.
The wok arrives seasoned with the Quenched™ finish and ready to use, seasoned with 100% non-GMO rice bran oil. A natural oil-based seasoning is non-toxic and endlessly renewable: it is the only low-stick surface that can be restored indefinitely rather than ending up in landfill the way an applied coating does. Read the seasoning and care guide before first use, then keep the wok clean, dry and lightly oiled. The surface improves with every cook.
Seasoned iron builds a naturally low-stick patina and gives the high-heat sear and wok hei that traditional wok cooking is built around. It has to be dried after washing and kept lightly oiled, and long acidic dishes will strip the seasoning back. Stainless steel, like our nöni™ woks, needs no seasoning, will not rust and is unbothered by tomato, wine or citrus, but it will never build a patina. Iron for the sear and the ritual; stainless for the low-maintenance everyday.
The deep bowl and 4.5 litre capacity cover a whole repertoire in one pan: steaming, pan-frying, deep-frying, poaching, boiling, braising, smoking, roasting and baking, indoors or over a fire.
