A quick note on hotspots: In well-constructed single-piece pans like ours, hotspots don’t come from the pan itself.   1. Measure the diameter of your burner (or the active coil on induction).

  2. Check the stove-contact surface listed on each Solidteknics product page (under Features & Dimensions).

  3. Aim for a burner that’s slightly smaller than the pan’s contact base, or the closest available option.

  4. Always place the pan in the centre of the burner for the most even heat.

Example: 30 cm pan with a 24 cm stove-contact surface pairs beautifully with an 18–22 cm burner. Smaller burners will still work, you'll just need a little more time to preheat your pan.

  • Gas: Flame height and spread matter as much as burner size. Choose a flame pattern that sits within the base of the pan.

  • Induction: The printed circle is often not the coil size. Choose the largest coil that fits fully under the pan

  • Electric: Generally even and forgiving, centre the pan and heat gradually.


Do Gas, Electric, and Induction Cooktops Need Different Techniques?

Yes slightly, but the same core rule applies to all three: centre the pan over the heat source and heat gradually.

Gas: Gas flames spread unevenly, so flame height and spread matter more than the burner ring itself. Aim for a flame pattern that mostly sits within the base of the pan, and centre the pan over the flame — not just the grate. Tip: If your gas burner is smaller than your pan, a diffuser plate or trivet can help spread heat more gently. It’s also great for simmering, low-and-slow cooking, and avoiding scorch marks on stainless steel.

Electric (radiant): Tends to provide a more consistent and predictable heat area than gas. Because the heat comes from a solid element rather than an open flame, temperature tends to be steadier and more even across the base of the pan. Centre the pan and allow it to heat gradually for best results.

Induction: Can deliver very fast, intense heat, so gentle preheating is especially important, particularly if the burner and pan aren’t a close match. Start low, heat gradually, and let the pan come up to temperature evenly. Note: On many induction cooktops, the printed circle doesn’t reflect the size of the active coil underneath. If you’re unsure which zone to use, choose the burner with the largest coil that still fits comfortably within the pan’s base.
