Heavy iron, serious heat. A 31cm heavy-gauge AUS-ION frypan from a single sheet of Australian wrought iron, coating-free and built for big sears.
Australia
The AUS-ION™ 31cm XHD Frypan is an eXtra Heavy Duty Australian-made iron frypan, wrought from 4mm-thick clean Australian iron and built deeper and thicker than the other AUS-ION™ skillets. With a 3.55-litre capacity, a long vented handle plus a helper handle for big loads, it is the go-to pan for large, demanding cook-ups — frying, roasting, baking and searing — with no synthetic coatings, PFAS, PFOA or PTFE.
Wrought in Sydney from clean Australian iron, the XHD has a one-piece seamless design with no joins, screws or rivets. The 4mm body is built for high performance and daily use, delivering maximum conductivity for even cooking and long-lasting performance even in the toughest conditions. The long ergonomic handle has vented cut-outs designed to stay cool on the stovetop, while the helper handle keeps the pan balanced when fully loaded. The base carries an engineered concave to allow for heat expansion, each pan is date stamped, and a calico storage bag is included.
The XHD is ready for all heat sources, indoors and out: induction, electric, ceramic and gas cooktops, BBQs, pizza ovens and campfires. It is oven safe and designed to fit a standard 600mm domestic oven. Pair it with the matching 31cm XHD Crêpe Pan, which doubles as a skillet-lid, for the ultimate cooking combination.
Naturally seasoned with non-GMO rice bran oil and free from synthetic coatings, this pan only improves with age. Care follows the standard seasoned-iron routine: rinse with warm water after each use, dry thoroughly, apply a light coat of oil — no soap needed — and store dry. Patchy surface variations are normal and develop into deeper seasoning over time.
The deeper 6cm sides and 3.55-litre capacity make the XHD perfect for big portions, saucy dishes and one-pan meals — from family stir-fries and braises to roasts and bakes — moving from stovetop to fire pit without missing a beat.
100% Australian made and wrought in Sydney, the 31cm XHD Frypan is still lightweight compared to cast iron while offering exceptional heat retention. It is backed by a multi-century warranty — built to be handed down, not thrown out — making it a lifetime workhorse for serious home cooks and professionals, and a natural partner to the nöni™ non-nickel stainless range.
XHD stands for eXtra Heavy Duty: at 4mm the body carries a third more iron than the 3mm standard pans, holding more heat for hard searing and busy kitchens. The 6cm-deep bowl also holds more than the 5cm bowl of the standard 30cm frypan, and the helper handle keeps the 2.73kg pan balanced when fully loaded. Choose the XHD when capacity, depth and relentless daily use top the list.
