Where classic AUS-ION™ iron relies on a textured surface that anchors seasoning over time, the Polished cooking surface has fewer microscopic peaks and valleys for food to grab onto — oil spreads more evenly and food releases more easily straight out of the box. It is not a coating, just science and careful polishing. No seasoning is required, the surface is easier to clean than traditional seasoned iron, and the exterior is factory-seasoned to protect against rust. A natural patina can still be developed over time for those who want one.
The wok keeps the seamless, one-piece wrought construction the range is known for — no rivets, welds or coatings, and no synthetic anything to scratch, peel or leach. Lighter and more responsive than cast iron, it heats fast and answers quickly to the burner, with a flat base for stability on modern cooktops, dual handles for control, and an engineered concave base that allows for expansion under heat.
Use it on induction, gas, electric and ceramic cooktops, in the oven, on the BBQ, or over open flame — pizza ovens and campfires included. Hand wash only: warm water (no soap needed), dry thoroughly, scrub the cooking surface in a circular motion following the grain of the polish, and finish with a very thin wipe of oil. The polished finish dulls naturally with use — completely normal — and can be restored to a shine with a scourer or steel wool following the circular grain.
