The AUS-ION™ Polished 22cm Sauteuse is a small-but-mighty Australian-made iron pan, crafted from a single solid sheet of Australian wrought iron and precision-polished for smoother performance straight out of the box. The deeper sauteuse shape is ideal for everyday tasks — sauces, eggs, toasting spices, melting butter and preparing sides — with no coatings, no rivets and no seasoning break-in required.
Classic AUS-ION™ pans carry a fine surface texture designed to anchor seasoning over time. The Polished range is engineered differently: a precision-polished cooking surface with fewer microscopic peaks and valleys for food to grab onto, so oil spreads more evenly and food releases more easily from the very first use. It is not a coating — just careful polishing. No seasoning is required, the surface is easier to clean and more forgiving to cook on, and the exterior is still seasoned at the factory to protect against rust. For cooks new to iron it is a friendlier starting point; for professionals it is a new level of control. A natural patina can still be developed over time if preferred.
The pan keeps everything AUS-ION™ is known for: seamless one-piece wrought construction with no rivets, welds or coatings, naturally non-toxic with no synthetic coatings and no leaching, and noticeably lighter and more responsive than cast iron. The ergonomic vented handle stays cooler for longer, and the base carries a carefully engineered concave to allow for expansion as the metal heats.
Use the Polished Sauteuse on induction, gas, electric and ceramic cooktops, in the oven, on the BBQ, or over open flame — including pizza ovens and campfires. Because there is no seasoning layer to strip, it can also handle acidic cooking without harm, though a subtle metallic note is possible with very acidic dishes.
Care is straightforward: hand wash only with warm water — no soap needed — dry thoroughly, scrub the cooking surface in a circular motion following the grain of the polish, and wipe with a very thin layer of oil after each use. The bright surface will naturally dull with use; that is normal, and the original shine can be restored with a scourer or steel wool following the circular grain.
